meal week 1

chicken broccoli casserole
stir fry
white chicken chili
tostados

<<Chicken Broccoli Casserole>> (I originally was going to go off of this recipe but didn't have time to put it in the crock pot so of course there are a lot of recipes similar)
--this is one of Jesse's favorite dinners but the original recipe is filled with "cream of crap" soup. If I am making it I make my own homemade cream of chicken soup-starting out with butter and flour and adding chicken broth and milk (I have done it with almond milk as well) and have added greek yogurt instead of sour cream.
this last week I tried to add even more vegetables to this dish and pureed cauliflower (I need to make sure I steam the cauliflower first so I don't have the raw taste) But I added the chicken broth to the cauliflower and blended it in the blendtec till nice and smooth. Then made the butter and flour mixture and then added the cauliflower mixture to that instead of adding milk. It surprisingly turned out and Jesse still liked it. It of course had the cheese and chicken to make the dish yummy for Jesse.

<<Stir Fry>> (this is a recipe I have gone off before as well)
--Well I had a stir fry mix from smiths in our freezer which was pretty healthy but it did have the sauce with it-which not so healthy but it turned out fine) With stir fry I usually add tons of veggies. I know I did celery, carrots, broccoli, zucchini, mushrooms.  I always do brown rice..but next time I should try added a little quinoa to it as well-but not too much Jesse doesn't love the bitter taste. I also like to add bok choy to the stir fry.

<<White chicken chili>> (I like this recipe because it doesn't call for any cream or half and half)
--I felt like this was a good recipe to have beans and some other veggies. I added a can of chicken-not my favorite to do but it was last minute. I chopped up celery, carrots, corn, onions, garlic, and I think I even added zucchini to this as well-With the great northern beans.

<<Tostados>>
--they are a go too here. I feel like I can make them last minute and still have dinner. I was going to have some ground beef with them but I didn't feel like meat and Jesse was ok without it as well. It was basic with a 3 bean mixture-usually just black beans though. greek yogurt for the sour cream (I found a brand we think taste just like sour cream so it works for us with being healthier than sour cream) cheese, avocados, green mixture, salsa/tomatoes. on corn tortillas.
